Eat Bread, Not Cake

An Alternative for Breakfast or Even Lunch

This is my family recipe for Banana Walnut Bread. This bread holds up well to slice, put in the toaster (or toaster oven). Don't be afraid to slather on the butter and jam.

So why have frozen waffles for breakfast when you can have this tasty, filling banana bread instead?

I would recommend this bread as a great lunch alternative. Cut a thin slice, spread with peanut butter (additionally, add sliced banana) and top with another slice of this nutritious bread.

Maybe Marie Antoinette really said, "Let them eat bread (not cake)."

Use Overripe Bananas

Essential Ingredient


Begin by mashing 2-3 large, overripe bananas, equal to one cup.

Set aside.

Let's Begin

Mix Ingredients


Mix 3/4 cup granulated sugar, 1/4 cup margarine, and 2 eggs.

Using mixer or hand mixer, beat on high until light in texture.

Blend in 1 cup mashed bananas, using the mixer.

Flour Mixture

Sift Dry Ingredients


Sift 2 cups all purpose flour. Sift with 1/4 teaspoon baking soda, and 1/2 teaspoon salt (optional).

Add sifted dry ingredients to liquid mixture all at once. Beat until smooth.

Chop Walnuts

Buy Walnuts in Shell or Bag

You can purchase walnuts in the shell, crack them, remove the meat and chop them, or you can purchase walnuts already shelled. I purchased a 4 oz bag of whole walnuts and chopped them myself.

The photo shows one cup of chopped walnuts as the recipe calls for that amount. However, I chose to use only 1/2 cup in my recipe today. You can stir in 1/2 - 1 cup walnuts now.

Time to Bake

Finish the Batter

Pour the batter into a greased loaf pan. I used margarine in a glass pan for easy removal.

Bake at 350 degrees for 55-60 minutes. Use a toothpick to test bread to see if it is sufficiently done. Do not overcook. Cool on rack.

Slice with a sharp knife into desired slices. This is a bread, not a cake. Toast it and try it with cream cheese. Enjoy!
